I looooooove meatloaf. It's seriously one of my favorite meals, especially when combined with my mom's cheesy potatoes. But who wants to wait an hour for food? Not me.
Meatloaf: Makes 6 seventy gram cupcakes (I usually consider 3 a good serving)
About 1/2 lb (208 grams) defrosted ground beef
1/2 (70 grams) diced onion
5 Tbs (5 grams) shredded carrot
1 (46 gram) egg
1 1/2 slices (40 grams) bread crumbs
1/2 tsp garlic
1/2 tsp salt
1/2 tsp pepper
Combine ingredients evenly. Press balls of mixture into a muffin tin or silicone muffin wraps. Personally, I weigh mine individually to make sure they're perfectly even.
Bake in oven at 350 for 20 minutes!
95 calories a piece!
If you want topping my mom mixes ketchup and brown sugar.
Mashed Potatoes: Makes 2 servings
2 large (231 gram) red-skin potatoes
2 Tbs (23 gram) sweet cream salted butter
1/3 cup 1% milk
Cut potatoes into 1" chunks, place in a pot with enough water to cover them. Let boil (covered or uncovered) until they're soft enough to put a fork through them easily. Drain and put in a medium bowl with the milk and butter. Use a mixer on the lowest setting to cream until smooth. At this point I sometimes warm them up a little more because the cold milk and mixing cools them down quite a bit.
if you split this exactly in half there's 203 calories per serving!

Crepes with Strawberry Filling
Growing up my gran made weird pancakes. It wasn't until several years later that I went to a restaurant with a crepe bar that I realized that these were what my gran had been passing off as pancakes for years. Although I love pancakes, crepes are my favorite breakfast food.
In my recipes I will include regular measuring as well as grams/oz so if you weigh your food you know the calories are perfectly right!
Crepes: Makes 4 1/4 cup batter servings (I almost always burn one so I end up with 3)
1/2 cup (62 grams) Wheat enriched flour
1 (49 gram) egg
1/4 cup (2 oz) 1% Milk
1/4 cup (2 oz) Water
Pinch of salt
1 Tbs (12-14 grams) Salted sweet cream butter
2 tsp (3 grams) Raw Sugar
You don't have to use 1% or raw sugar, but my calorie count is only accurate for those particular ingredients.
Combine all ingredients in a small bowl and use the whisk attachment of your mixer to completely blend without any lumps.
Use a 1/4 cup to pour batter into a skillet. I use a non-stick pan so I don't have to use any spray, oil, or butter adding calories.
Watch them very carefully, since they're thinner than pancakes they cook really fast. They should not brown more than very lightly on either side.
Each crepe is 103 calories (412 total)
Strawberry filling:
6-7 (111 grams) medium sized strawberries
1 Tbs (11 grams) Raw Sugar
Slice the strawberries into fourths (or smaller), combine with sugar and heat in the microwave on high for 1 minute. Use a fork or whisk to smash and mix together. Put on top of crepes (or pretty much anything else!)
Only 80 calories!
As a whole meal 492 calories
